Tonight I made Chipotle Lime Shrimp Tacos with Strawberry Salsa from How Sweet Eats. I was able to follow this recipe to the letter, only substituting lettuce for tortillas and omitting the cabbage and cotija cheese and doubling the amount of shrimp to 2 lbs. It was delicious and Josh, Raina, and I demolished everything. Raina asked if I would make the Strawberry Salsa for her birthday, and I did make a few tweaks to suit my family’s tender palates (they can’t handle spice to save their lives!) so I will share here what I did.
- 1 pound of strawberries, hulled and chopped
- juice of 2 limes
- 1/2 red onion, diced
- 1 large jalapeno pepper, seeded and diced (choose the biggest one!)
- some chopped cilantro
Mix all this together and let it marinate in the refrigerator for a few hours. That’s it! Enjoy!
