Last week was a week of delicious Paleo meals, and I am excited to get started with another delicious week! This week’s menu will be as follows:
Sunday: Chipotle Lime Shrimp Tacos with Strawberry Salsa from How Sweet Eats
Monday: Thai Steak Salad with Roasted Chili Mango Vinaigrette from How Sweet Eats
Tuesday: Honey Chipotle Chicken Bowls from How Sweet Eats
Wednesday: Toasted Coconut Tilapia with Pomegranate Salsa from How Sweet Eats
Thursday: Beer Can Chicken and Arugula Kale Reggiano Salad from How Sweet Eats
Tonight I weighed in at 170.4 pounds, losing exactly 1 pound in the last 7 days. I did not enjoy a lot of progress in the past week when it comes to my weight, but I was also not very good about avoiding non-Paleo foods. The problem with the Paleo diet is you cannot do it halfway. Paleo eating is high-fat, low-carb. All those fats are great for energy. Once you have cut out all the extra sugar, your body stops turning to sugar for energy and starts burning fat for energy. But if you are consuming all this fat and then eat a bunch of carbs (like the almost entire turtle ice cream cake I consumed this week “to get it out of the refrigerator”), your insulin levels spike. Insulin tells your body to store fat. and you are consuming a ton of it! So being half-assed about following the Paleo diet can even make you fat.
This week I am making a commitment to following the diet more closely, and hopefully Baby DJ will let Mommy even work out this week.
