Tonight I made How Sweet Eat’s Red Wine Marinated Flank Steak with Cherry Tomato Caprese Salsa. Unfortunately, I got confused with my shopping list and bought tubed basil! 😦 It was still really good. I want to try this again, properly.
Tonight I made Jessica Merchant’s Bang Bang Shrimp With Napa Cabbage Slaw from How Sweet Eats. I expected the fiance to balk, because he is anti-mayonnaise. It’s his kryptonite. But I snagged a recipe for homemade mayo from The Pioneer Woman Cooks, and it was so simple and so much better than store bought! And guess what? Josh didn’t even detect the mayo! Everyone loved those little suckers! Raina didn’t even complain about the kickiness.
Tonight I made How Sweet Eat’s Garlic Brown Sugar Flank Steak with Chimichurri. It was pretty good. I especially liked the chimichurri. I just replaced the brown sugar with honey. I think next time I should marinate longer.
I have fallen off a bit and I am trying to catch up so for the next month, blog posts are gonna suck as my memories are so old at this point. BBQ Chopped Chicken Salad from How Sweet Eats was simple, cheap, and Josh said if I cooked like this every night he could eat salads forever. I also learned to operate the BBQ!!! Yay! Now I don’t have to depend on the fiance when I have recipes using the grill! BBQ chicken, green onions, baby arugula, cilantro, cherry tomatoes, avocado, and smoked white cheddar chunks come together under a honey mustard vinaigrette that blew us away. YUM!
